Located just inside the Paramount Hotel at 86 Pine Street, Seattle, WA, Chan offers a unique blend of traditional Korean dishes prepared with Western ingredients and modern cooking techniques. Under the expert guidance of Korean-born Executive Chef and Owner Heong Soon Park, we deliver an immersive culinary experience full of bold flavors that balance spicy, salty, sour, sweet, and umami.

Executive Chef and Owner

Heong Soon Park

Chef Heong Soon Park's journey began in his parents' Japanese restaurant in Anchorage, Alaska, where he first delved into the culinary world. A native of South Korea, Chef Park has traveled extensively, living in places such as Malaysia and Switzerland, which enriched his appreciation for diverse cuisines. After graduating from business school, he moved to Seattle and immersed himself in the city's vibrant food scene, eventually attending the Art Institute in Seattle to specialize in French and Italian cuisine.

In 2012, Chef Park opened Chan Seattle, quickly earning acclaim from critics and diners alike for his innovative approach to Korean cuisine. His dedication to sustainability was recognized in 2015 with a Rising Star Award from StarChefs. Further expanding his culinary influence, Chef Park launched Meet Korean BBQ in Seattle's Capitol Hill in 2020, celebrated as one of the top spots for high-quality Korean BBQ.

In 2022, Chan Seattle moved to a larger, updated space within the Paramount Hotel, allowing Chef Park to serve even more guests while continuing to be the only modern Korean restaurant in downtown Seattle. This relocation reflects his ongoing commitment to providing exceptional dining experiences that blend traditional Korean flavors with modern culinary techniques.

Shane Sahr

Our commitment to delivering an extraordinary dining experience extends beyond the kitchen. With General Manager Shane Sahr at the helm, Chan Seattle offers a welcoming and engaging atmosphere. Shane's 24 years of industry experience and numerous accolades, including recognition from Wine Spectator and Esquire Magazine, assure our guests of the highest standards in service. Our full cocktail bar features a creative selection of craft cocktails designed to perfectly complement our menu.
